The owner had some literature, and I found enough info in the intro sheet included with his paperwork to tell me how get into the controller and check a couple of things, but I'd like the rest of the story.

The owner had programmed all 4 defrost lockouts within a few hours of each other, which I think was causing it to ice up. I turned them off and started a manual defrost. You can't do much with that one code in the literature, so where can I find the main access code and a list of parameters? I'd like to be able to check the defrost time, term temp, box setpoint, etc. Call Traulsen tech support Way easier and a whole lot quicker than to try to decipher that damn book.
